Recipe: Miso soup


Miso soup is much more than just a hot drink: it is a culinary experience that embodies the philosophy of Japanese cuisine. Ingredients

  • 4 tablespoons of miso
  • 4 glasses of water
  • 200 gr. tofu, cut into small cubes
  • 4 sheets of wakame (a type of Japanese seaweed), optional
  • 2 fresh onions, finely chopped
  • 1 thin piece of kombu, optional

Instructions

  • If using wakame, place the leaves in a small bowl with a little water to soften them.
  • In a pot, boil the water with the kombu piece (if using) for about 10 minutes on low heat.
  • After 10 minutes, remove the kombu and add the tofu and green onions.
  • In a small bowl, mix the miso with a little warm water until it forms a smooth paste.
  • Add the miso paste to the pot and mix well.
  • Remove the pot from the heat before the miso boils (boiling can alter the flavors).
  • Add the wakame to the soup and stir.
  • Serve hot.
